Slayer - Necrophobic's a nice choice but Altar of Sacrifice gets m vote (especially if you allow two tracks and let it follow into Jesus Saves)
Anthrax - A.I.R is, I think, a great introduction. Or else Skeletons or Indians.
As for the plus one, I'd say Exodus - absolutely anything from BBB.
